Fat Choy, a Lower East Side restaurant that closed last year despite positive reviews from the city’s food critics, is getting a second chance. Chef Justin Lee, the restaurant’s owner who most recently helped open Virginia’s in the East Village, is resurrecting the vegan Chinese-leaning restaurant in Englewood, New Jersey, at 52 East Palisades Avenue, at Grand Avenue. It’s part of a new restaurant team backed by a co-founder of Bluestone Lane.
The restaurant that Eater said ushered in a “new era” of Chinese vegan fare is on track to open around August as a full-service spot that “will feel a bit like a diner,” says Lee, a restaurant perched on the town’s walkable main drag. The original that Lee and his wife Katie owned without partners closed due to the pressures of COVID on small restaurants and the effects of rising costs on a spot that charged less than $10 per dish.
The chef says he’s tweaking the Fat Choy menu, which was known for its mushroom sloppy joes and and salt-and-pepper cauliflower, so it’s more accessible to a wider audience — although it will still be vegan. Look for a menu of sticky rice dumplings and Kung Pao hashbrowns, as well as sides like Sichuan curly fries. That cauliflower might become a General Tso’s dish and there will likely be a vegan version of matzo ball soup on the menu, too.
The reopening has come about serendipitously, Lee says — since he had “zero intention” of reopening the restaurant. The chef was planning on joining his wife in a teaching career through a fast-track teaching fellowship through the New York City department of education, but fate had other plans. “My work consulting with Virginia’s was a lot more involved than I thought it was going to be,” he says, and he didn’t complete the application on deadline. “We’re fortunate I made an egregious error,” he says.
It allowed Lee to be open to an opportunity from entrepreneur Jonathan Krieger, co-founder of the Australian coffee brand Bluestone Lane (now with over 50 locations) to reopen Fat Choy in New Jersey and to become a culinary director of a new restaurant group, he says. In addition to Bluestone Lane, Kreiger is founder of the Spring in Tenafly, New Jersey; and was the CEO of Taco Dumbo, with eight New York locations that shuttered during COVID.
Lee is now a partner in multiple concepts in New Jersey, including a new ice cream shop called Sugarfly that opened in a development in Tenafly last week called the Spring. “There are a lot of changes happening,” he says.

Sicily is also popular and enjoying the limelight these days thanks to the success of the TV series “The White Lotus.” Just try getting a room at San Domenico Palace Taormina Four Seasons where the hit show was filmed. Even if you manage a reservation, the price for an overnight stay at the height of the current season will significantly set you back.
I return to Italy time and time again but am skipping the trip this summer because I don’t want to contend with hordes of people who are all jockeying to see the same sights and enjoy the scenic settings.
Instead, I transport myself to the country by savoring its delicious foods at home. That often means visiting one of my favorite restaurants: Sofia, a farm to table Italian steakhouse complete with a sexy cigar bar and lounge in Englewood, New Jersey, just over the George Washington Bridge.
The current chef Emanuele Cipolla hails from Sicily and takes great pride in his heritage by recreating some of the beloved dishes he grew up with by serving them to his customers, many of which frequent the always-buzzy restaurant multiple times a week.

He recently shared a recipe with me for a potato gnocchi with saffron and mussels and assured me that despite the refined name, it’s an easy dish to execute at home. I’ve shared it below, along with why it’s so special to Chef Cipolla and his family.

You may not be going to Sicily this summer or have a trip planned anytime soon, but this gnocchi- temporarily, at least- will transport you there.
Potato Gnocchi with Saffron and Mussels
“If I have to decide one of my plates that represents me the most, I believe this is it. The gnocchi to me are synonymous with home and family. In my house, gnocchi is always what we ate for a cozy family meal. Saffron and mussels are some of the major flavor profiles of Sicily. In addition, the colors of this dish (red and yellow) are the colors of the Sicilian flag.”
Ingredients for 4 servings:
For the gnocchi:
800g (1,8 lb) red potato (alternative can be russet potatoes)
300g (10 oz) flour
1 egg
150g ( 5oz) Parmigiano Reggiano
2g (1 tsp) Nutmeg
Salt and pepper
1kg (2.2lb) coarse kosher salt
For the sauce:
400g P.E.I. mussels
1 clove garlic minced
1tbsp e.v.o.o.
½ cup white wine
250g cultured butter European style
4g saffron pistils
Let’s start preparing the gnocchi.
Preheat the oven to 200c (400 f).
Wash the potatoes, and lay on a baking tray that’s sprinkled with coarse kosher salt evenly to make a bed for the potatoes.
Cook in total for 4550 minutes or until fork tender, but turn halfway through.
Once the potatoes are ready and fork tender, peel them and pass them through a potato ricer. Try to do this while the potatoes are still hot.
When they reach room temperature, add all the other ingredients and start working them together to make the dough. Knead the dough until smooth and elastic, cut into six 6 parts and roll each one in long “snake” ¾ inch thick.
Cut every “snake” in pieces of ¾ inch to create square potato gnocchi.
While the potatoes are cooking in the oven, we can start preparing all the other elements of this plate:
In a large pan, put e.v.o.o. and minced garlic and cook until golden brown.
Add the mussels and the white wine, make them steam until fully open,
Strain the juice in a bowl and deshell the mussels. Place them back in the juice and cover with a plastic wrap so they don’t get dry.
When the gnocchi are ready, boil them in salt water until they come to the surface.
In a pan, melt the European butter with the saffron, toss in the gnocchi, add the mussels, and slowly add the mussel juice until everything comes together in a beautiful, velvety sauce.
Divide the gnocchi into bowls and garnish with the mussels.

The Shirvan Family Live Well Center in downtown Englewood is now open, according to a Wednesday announcement from Englewood Health.
Located at 59 W. Palisade Ave., the center offers educational programs and hands-on activities that empower individuals and families to lead their healthiest lives with a focus on three pillars of health (nutritional, emotional and physical wellness).
These programs are designed to proactively prevent chronic disease among at-risk populations. The center offers unique programming for children, adults and the elderly, and all programs are free. Many programs are offered in Spanish.
